The Best Taco Bowl Bean Recipe for Parkinson’s

Last week’s blog about beans being a Parkinson’s superfood was a hit! (Click here to read it.) Several of my readers wanted to know the recipe for the photo I shared of my Instant Pot Taco Bowl. This is my absolute favorite way to eat beans.

As you can imagine, I’m really busy managing the Rebel Fit Club, so I need fast and healthy meal prep during the week. It’s so important to nourish your body with REAL ingredients that are low in saturated and trans fat. This recipe only takes five minutes to prep and requires a minimal amount of chopping. It makes approximately four servings—enough for dinner for two nights for my sweetheart Sean and myself. We eat this every week!

Here is my recipe. You can easily modify and make it your own!

Instant Pot Taco Bowls

Ingredients:

  • 32 oz. chicken or beef broth (I haven’t tried vegetable broth but it may work)
  • 1 pound frozen or fresh boneless skinless chicken breasts or lean hamburger (can omit for vegetarian)
  • 1 16-oz. jar of salsa (your choice of mild to hot)
  • 3 15-oz. cans of beans—black, red, and/or kidney beans, drained (I like a variety of beans because I think it tastes better that way. Rinse them if you want—I don’t.)
  • 1 16-oz. bag frozen corn
  • 3 cups mushrooms, quartered
  • 1-2 green or red peppers, cut into bite-size chunks
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Topping Ideas:

  • Cheese (I use vegan cheese)
  • Fresh cilantro, chopped
  • Avocado, sliced

Instructions:

  1. Throw everything into the pot, even if the meat is frozen. Cool, huh?
  2. Set valve to seal. Cook on Manual (high pressure) for 10 minutes.
  3. Allow pressure to naturally release for 12 minutes.
  4. If you used chicken and didn’t want to cut it up before, take it out now and pull it apart.
  5. Add desired toppings.

Super easy and minimal chopping! Because you use the salsa, you don’t need to chop onions or garlic. I don’t use taco seasoning—there is a lot of mystery stuff in it to keep it from caking.

You can throw in kale or other fresh herbs. I’ve made many versions of this recipe and it’s always good!

If you don’t have an Instant Pot or pressure cooker, I’m sure you can figure out a way to slow cook this. The idea is simply that good food doesn’t have to be a lot of work.
