I love squash. Every fall I like to try new varieties. Last year, at the advice of a friend, I tried delicata squash and I fell in love! Just the name tells you that you’re in for a treat. And it’s so easy to prepare. You don’t even have to peel it, you can eat the skin! With my busy schedule, I’m all for delicious healthy food that is easy to prepare.
Delicata has a flavor similar to a sweet potato, chestnut and corn. The flesh of the delicata squash is sweet. It is oblong in shape, and can be yellowish, tan or cream in color with green stripes.
This winter squash can also be called Bohemian squash, sweet potato squash, or peanut squash. It holds its shape when cooking, so it’s a perfect edible bowl that can be stuffed and baked with meats, quinoa, or other delicious foods.
Delicata is perfect or people with Parkinson’s disease. It is gluten-free, fat-free, high in fiber, iron-rich, and loaded with calcium and vitamins A and C. Best of all, it is easy and quick to prepare! What’s not to love?
How to Roast Delicata Squash:

- WASH IT. It’s extra important because you’ll be eating the skin of the squash. Give it a good scrub with a brush and make sure it’s clean.
- Cut off both ends (so that you have flat surfaces to work with).

- Cut down the center (the long way).
- Scoop out the seeds with a spoon.
- Cut into thin slices (half-moons). Obviously, the thinner you slice them, the faster they will cook. The most important thing is to make sure they’re all even thickness so that they cook at the same speed.
- Toss or spray the slices with olive oil, arrange them on a baking sheet, and sprinkle with salt and pepper.
- Roast them in the oven at 425°F until they’re crisp (approximately 20 minutes on one side, flip, and bake for another 5-10 minutes more).
When you roast delicata squash like this, it gets super crispy. If you like salty, crunchy things (like chips), this is the recipe for you. You can roast them for less time if you want a softer texture (approximately 23 minutes), or longer for more crunch! The flavor ends up being sweet with just a hint of saltiness. Enjoy!
